Red Currant Cheese Bars - Cheesecake Bites

Sometimes a tea cake just isn't enough, but you only want to make little bites of awesomeness!  This  recipe was always perfect for birthday parties to add to the platefuls of little treats, or for that extra bit of sweetness without the huge portions at the end of a special meal.  I love how simple it is to make these little cheese-cakey bites!


Red Currant Cheese Bars
Ingredients









  • Pastry base:
  • 1 cup plain flour
  • 1 cup self-raising flour
  • Pinch salt
  • 1/2 cup castor sugar
  • 125g butter
  • 1 egg, beaten


Topping:

  • 250g cream cheese, softened
  • 1 egg
  • 1/4 cup sugar
  • 1 teaspoon grated lemon rind
  • 1 cup red currant or cherry jam


Sift flours and salt into a bowl and add sugar.  Rub in butter until mixture resembles breadcrumbs.  Add egg, and mix to a firm dough.  Knead dough lightly, then roll out to fit a 30 x 23cm tin.  Chill in the freezer.

Beat the cream cheese, egg, sugar and lemon rind together until smooth.  Spread evenly over pastry base. Place spoonfuls of jam on top of cheese mixture, swirling into the cheese with the tip of a knife.  \

Bake into a moderate oven for 35 minutes.  Cool in the tin, then cut into bars.

Hot Cross Buns - Easter Special

Easter is almost upon us!!!  I thought I'd get in early with a recipe I really really want all of you to try!!  After all, what is Easter without yummy hot crossed buns!  Especially home made!

Hot Crossed Buns


























Ingredients

  • 4 cups plain flour
  • 1 teaspoon of salt
  • 30g compressed yeast
  • 1 1/2 cups of milk
  • 1/2 cup sultanas
  • 60g butter
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon
Glaze
  • 1 tablespoon of sugar
  • 1 teaspoon of gelatine
  • 1 tablespoon of hot water.


Cream yeast with 1 teaspoon each of the sugar and flour, add lukewarm milk, mix well.  Cover and stand in warm place for 10-15mins or until the mixture is frothy.  Sift flour, salt, sugar and spices; rub in butter, add beaten egg, sultanas and yeast mixture and beat well.

Cover bowl with a cloth and stand in a warm place until the mixture doubles.  Punch dough down and turn out onto a floured surface. Knead well until the dough is smooth and elastic.

Cut the dough into 3 equal pieces, then cut each piece into 5 making 15 in all.

Knead each into a round shape.  Put buns into a lightly greased 18cm x 28cm  rectangular tin.  Leave to rest in a warm place until the dough reaches the top of the tin.

Sift 1/2 cup plain flour, mix to paste with 1/3 cup of water.  Fill into a piping bag.  Pipe crosses on each bun.  Bake in a hot oven for 15-20mins.  Remove from the oven and immediately brush with glaze made by dissolving 1 tablespoon of sugar and 1 teaspoon of gelatine in 1 tablespoon of hot water.

Cool buns on a rack and devour with lashings of butter!

Huckleberry Cake

I always love an easy to make tea cake which you can prep in 20mins ready for any unexpected guests ... and easy doesn't mean tasteless!!  The delicious Huckleberry Cake is definitely one for the recipe book with it's lovely tea cake texture sprinkled with delicious blueberries!

Huckleberry Cake


Ingredients











  • 1-1/2 cups plain flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1-1/2 cups fresh or partially thawed blueberries (if you have access to huckleberries you can substitute) 
In a large bowl stir together flour, sugar, baking powder and salt.  In small bowl beat together milk, egg, butter and vanilla.  Stir mixture into flour mixture until dry ingredients are moistened.  Stir in berries.  Turn into greased rectangular cake pan.  Bake in a 180 degree over (mid-high) for 40mins or until pick comes out clean.  Cool on wire rack and cut into squares.
