Red Currant Cheese Bars
Ingredients
- Pastry base:
- 1 cup plain flour
- 1 cup self-raising flour
- Pinch salt
- 1/2 cup castor sugar
- 125g butter
- 1 egg, beaten
Topping:
- 250g cream cheese, softened
- 1 egg
- 1/4 cup sugar
- 1 teaspoon grated lemon rind
- 1 cup red currant or cherry jam
Sift flours and salt into a bowl and add sugar. Rub in butter until mixture resembles breadcrumbs. Add egg, and mix to a firm dough. Knead dough lightly, then roll out to fit a 30 x 23cm tin. Chill in the freezer.
Beat the cream cheese, egg, sugar and lemon rind together until smooth. Spread evenly over pastry base. Place spoonfuls of jam on top of cheese mixture, swirling into the cheese with the tip of a knife. \
Bake into a moderate oven for 35 minutes. Cool in the tin, then cut into bars.
